    there's always the possibility that one may be
    sold the meat of a septicemic animal, despite all
    the best efforts of public health inspectors.
    Always a risk... and even cooking it to death doesn't really save one
    from that sort of possibility....

    It will save you from bacterial sepsis. Prion
    contamination, you can cook something black and
    the things will persist.

    I'll eat fish even with visible parasites but will
    remove any apparent ones - actually I had to do this
    a couple months ago. Look at the numerous YouTube
    videos on the subject - it's not incredibly hard
    to do ... and even I can see the things, my close
    vision being still kind of okay.
    As long as it's large enough to see... I don't think I've ever actually
    seen parasites in fish... but then mostly I get my fish (for cooking)
    from Wegmans or (for sushi) from Fu... ;)

    Parasites are generally macroscopic. Your fish sources
    are safe in the one case because the merchandise has
    been hard frozen and in the other because Fu has done
    the candling work already (plus it might have been
    frozen, too).

    Like fortune cookies. Very few of them say anything
    specific, though I did get one a few weeks ago that
    said "you will have a happy and prosperous old age."
    If I could get a guarantee for that, that would be
    really great.
    Yup... ;) Ones like that, I always look for the "waffle" factor that invalidates what it seems to be promising... (G)

    I've heard of even more audacious promises, such as
    "you will not be the one to pay the bill."

    {retty easy to remember, just recall that it's the fifth

    indicated that some Firefox process that I hadn't
    authorized was working in the background and had
    crashed. Heh. In other news, my GOES login has been
    wiped (I'm not unauthorized, my account is claimed
    never to have existed).

    Kung pao chicken with burned garlic noodles
    categories: pasta, poultry, Chineseish, main
    servings: 4

    h - for the Chicken
    3 skinless, boneless chicken breasts
    h - for the Marinade:\
    5 garlic cloves
    1/2 ts salt
    2 Tb sugar
    2 Tb soy sauce
    1 Tb cornstarch
    h - for the Sauce
    1/4 c soy sauce
    1/4 c white vinegar
    1/2 c chicken stock
    2 Tb sugar
    1 Tb cornstarch
    h - Others
    1 oz cashew nuts
    1 Tb grated ginger
    8 dried red chiles (or tt), split
    2 scallions, 1" lengths
    1 scallion, chopped
    3 Tb sesame oil

    Cut chicken into 1" cubes.

    Combine marinade ingredients and add chicken,
    making sure chicken is well coated. Allow to
    sit at least 20 min.

    Heat 2 Tb oil on high heat. Add the cashews,
    stirring occasionally; cook until golden. Set
    aside.

    In the same hot pan (which has plenty of oil
    left over), add chicken and marinade and cook
    on high heat, stirring frequently, for 5 min.
    Remov the chicken from the pan and set aside.

    Scrape up as much of the leftover marinade flecks
    as possible. To the same pan, add the remaining
    oil, and stir-cook the chiles for 1 min. Add the
    scallion lengths and then the ginger. Cook until
    greens are tender but not wilted. Add chicken.
    Whisk together the sauce ingredients and add.
    Stir well and bring to the boil, stirring often
    until sauce thickens. Cover and cook on low
    for 10 mins.

    Transfer to a bowl and garnish with chopped scallions.
    Serve with burned garlic noodles.

    Most if not all of Fu's fish comes in frozen, I'm pretty sure... I
    regularly see him thawing chunks... but maybe he just freezes after
    cutting up the whole fish...

    Years ago, back when we were in the habit of hosting what we called The
    Motley Crew on Sunday afternoons at Yangs (mostly college students,
    they'd pay in what they could afford), Richard got one that he restated
    as "You are a born sucker and will be fleeced regularly"... :) It was actually more like "you are altruistic and give freely"...
