• Haroset and pork chops

From RUTH HANSCHKA@1:123/140 to JIM WELLER on Sunday, February 24, 2019 00:39:58

Why am I suddenly thinking Haroset would make a good condiment
    for pork chops? (BAD Ruthie!)

Just call it compote and enjoy!

Hmmm - another use for mice pie filling, probably with added apple to
    cut the sugar a bit?

Title: Leek Hodgepodge With Sausage - Prei Stamppot Met Rookworst Categories: Dutch, Potatoes, Vegetables, Sausage, Cheese
    Servings: 6

    2 lb 2 oz. Potatoes
    1 lb 13 oz. leeks
    2 red peppers
4 TB butter or olive oil
    1/2 c milk
    4 oz grated cheese
    2 x 10 oz rookworst or other
    sausage
    salt

Peel the potatoes and boil them in bit of water for about 25
minutes. Halve the leeks lengthwise, spread the leaves and clean
them thoroughly under the cold tap. Then cut the leeks in thick
rings (1 cm or 1/3 inch).

Dice the peppers and take out the seeds. Heat half of the butter or
oil in a pan. Put in the leek and pepper pieces and saute them for
about five minutes. Slice the sausage.

Drain the potatoes and mash them. Add the rest of the butter or oil
and as much milk as to make a proper ‘mash’.

Mix in the leeks and peppers and half of the sliced sausage.

Grease an oven dish and put in the mix. Arrange the rest of the
sausage on top, sprinkle cheese all around the sausage.

    Put in a preheated oven - 200 C/390 F - for 20 minutes.

    Title: Cat Chasseur
    Categories: Game, Mushrooms, Wine
    Yield: 4 Servings

    2 Cats; cleaned, skinned, in
    - serving pieces *
    1/4 c Oil
    1/4 c Onions; chopped
    1 lb Mushrooms; sliced
    2 md Tomatoes, chopped
    Flour
    Salt & White pepper
    3 Turkish bay leaves
    1 tb Tomato paste
    2 c White wine

    MMMMM------------------------BUERRE MANIE-----------------------------
    2 tb Flour
    2 tb Butter

Heat the oil in a skillet and dust the cat with flour.
Brown the cat over high heat quickly then pour off the
    oil and fats that accumulate.

Add onions, mushrooms, tomatoes, flour, salt, pepper,
bay leaves, and tomato paste and cook for 5 minutes.

Add the wine and bring the mixture to a boil.

    Set your oven @ 350°F/175°C.

Bake the cat in your oven for 45 minutes.

Remove the cat and thicken the sauce with the beurre
manie (you know that fancy chefs have to have fancy
names ... this is a "roux".)

For the beurre manie, simply melt the butter in a
saute pan, add the flour and then cook over medium
heat for a minute or two to take the "floury" flavor
    out of the mix.

Pour the sauce over the cat and serve.

    * Rabbit may be substituted if suitable cats cannot be
    located and dispatched.

Dice the carrots, the green beans and the celery, wash the

Scoop the vegetables into an oven-proof dish and pour just enough

I have, almost certainly, eaten cat. I've told the story here before.
The scandal attached to the grocers selling cat as domestic rabbit was
the reason that a law was passed that domestic rabbit offered for sale
