Title: Home-Made Almond Paste Hemlagad Mandelmassa

7 oz Almonds
1 3/4 c To 3 1/4 c powdered sugar
Egg white or water
Scald, peel, and dry the almonds. Grind it twice, the second time
together with the powdered sugar. If you want a "finer" almond
paste, not so sweet, you take the smaller amount of powdered sugar
stated above.
Put the almond mixture in a mortar and crush vigorously. Add some
egg white or water (egg white has better binding measures than
water). When the mixture is smooth and tough, it's ready. Take it
up from the mortar and work it well together with your hands. If
it sticks to your fingers, you can "flour" it with some sifted
powdered sugar.
Now you can do what you like with it ... you can let it keep its
"white" color or color it any way you like, pink, light green or
yellow, or brown with cocoa powder. You can flavor it with lots of
things - candied fruit peel or coarsely chopped almonds - but in
most of my recipes you just use it as it is.
