    Hello everybody,

    Thank you for your well wishes. The surgeon said the surgery went well.
    I was surprised that it was only about an hour from the time she went
    into the OR until he came out and talked with me about the surgery. She
    had a general anesthesia and was groggy for quite a while. That was also probably due to the other medications also.

    Ruth had the option to come home Friday but the surgeon was willing to
    let her stay overnight. That was good as she had some additional
    physical therapy that she would not have otherwise had which included
    how to go up and down steps. As usual, the hospital food was not that
    great. I went home for the night.

    Today I went back up and Ruth was ready to be released. We had brought
    all of Ruth's prescriptions but the nurse said that they had to use the
    ones from the hospital. When the Utilization Management Coordinator came
    in, she informed us of this. The stay was not covered under Medicare
    Part A because Ruth's operation was considered an outpatient procedure.
    Also, she said the medications would also not be covered and so would be
    filed with insurance (Tricare for Life, which also acts as Medicare Part
    D). I said we had brought all of Ruth's prescriptions with us because
    that was what we were told to do. She said that this change is new an
    they would discuss what to do in this case to allow the medications
    brought in this circumstance to be used. This is a Medicare requirement
    (Form CMS 10611-MOON, Medicare Outpatient Observation Notice). I mention
    this in case a situation happens where someone needs to be in the
    hospital for observation but is not admitted as an inpatient by a
    doctor's order.

    We finally got Ruth released and loaded up. Since it was already lunch
    time, we stopped and got some Popeye's Chicken Tenders and biscuits
    ($3.99) plus drinks. We got it to go and ate in the truck so Ruth would
    not have to get out. The trip home was uneventful. We got home safely.
    Soon after, Ruth started out on the Kinetech machine to flex her leg.
    Then she moved to the recliner and has been using a cooling machine. It
    really does seem to help with the pain.

    Recovery will hopefully go well. She has the first follow-up appointment
    on Tuesday.

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Fire Balls
    Categories: Appetizer, Sausage
    Yield: 4 Servings

    12 oz Jalapeno peppers, canned
    1 c Buttermilk baking mix
    6 oz Mozzarella cheese --
    Shredded
    1 lb Sausage
    6 oz Seasoned bread crumbs

    * Use a spicy breading mix made for pork or for less spicy dish use
    unseasoned fine dry bread crumbs. A mixture of pork breading crumbs
    and plain crumbs is good to use.

    1. Cut off stem ends and remove seeds from the peppers. Rinse peppers
    to remove seeds, but allow some seeds to remain if you like them
    hotter.

    2. Stuff peppers lightly with cheese, then set aside.

    3. Thoroughly mix sausage, biscuit mix, and remaining cheese. Make
    small patties from the mixture. Place a pepper in the center of each
    patty, then wrap and seal the dough around the pepper. Coat one or two
    balls at a time by shaking them in a plastic bag with the pork
    breading mix or seasoning of your choice.

    4. Using a lightly greased skillet, brown sausage balls until the
    sausage is thoroughly cooked, turning several times.

    Very good news... :) Last night I passed on the news at church for
    praise, and continued prayer through the recovery... :) Hopefully all
    the post-op therapies will work out very well for her... :)

    They consider this a same-day surgery. I think they would rather she had
    gone home but she was still somewhat woozy from the anesthetic and did
    not feel it would be a good idea so she stayed overnight. The only
    walking was down the hall and back. There was no therapist to make sure
    she could do steps until Saturday morning. The overnight was considered observation, not inpatient.

    We had that flex machine. When the PT lady set it up (in hospital and
    in our home) it really helped. But, I was never able to get her leg positioned correctly and it hurt more than it helped when I set it up.
    We got sent home with one of those cooling machines and it was great.

    The first couple of flexes in it are somewhat painful but after a
    couple, Ruth seems to tolerate it okay. I try to make sure her foot is
    all the way in to the holder to make sure her knee will be in the
    correct position.

    Recovery will hopefully go well. She has the first follow-up
    appointment on Tuesday.

    Her follow-up went well. The elastic bandages and gauze were removed,
    leaving the vacuum dressing with its hose and pump. That will get
    changed this coming Friday. The doctor is pleased with her progress. The therapist was here today and she has increased the range of motion quite
    a bit over the past few days.

    Give her our best wishes.

    I will. I expect she will be back on soon.

    Here's a strawberry trifle variant:

    MMMMM----- Recipe via Meal-Master (tm)

    Title: Strawberry Trifle
    Categories: Dessert
    Cooktime: 5 minutes
    Preparation Time: 1 hour

    32 oz strawberries, washed and hulled and sliced
    1 c granulated sugar
    2 c water - divided use
    1 1/2 tb cornstarch
    2 tb lemon juice
    1 can (14-ounce) can sweetened condensed milk
    1 pk (3.5-ounce) package instant vanilla pudding mix
    16 oz Cool Whip Whipped Topping
    1 pk (15-ounce) ready-made pound cake, cubed
    Mint leaves (optional)


    Slice berries, reserving 6 for garnish if desired. Place 2 cup of the
    sliced berries in saucepan with sugar and 1/2 cup water. Bring to
    boil. Cook 3 minutes; remove from heat. Mix cornstarch and 1/4 cup
    cold water. Stir into strawberry mixture. Cook and stir until thick
    (about 2 minutes). Add lemon juice. Cool to room temperature.

    Combine sweetened condensed milk and remaining 1 1/2 cups cold water
    in a bowl. Add instant vanilla pudding mix and beat well. Chill for 5
    minutes.

    Cut pound cake into bite-size cubes.

    Meanwhile, beat cream until stiff. Fold into the pudding mixture.

    Layer pound cake, sliced strawberries, and strawberry mixture, pudding
    mixture. Repeat the layers; garnish with reserved strawberries and
    mint leaves.

    Okay. We have had some meals delivered by church members. That has
    helped. The freezer stock has helped also. When Ruth saw the doctor
    yesterday, he said he wanted her to do housework, including dishes. He
    wants her on her feet and moving around.

    the temperature I wanted, then used the cast iron skillet to sear them. They were very good. I also used it to reheat some prime rib that was brought too early to eat. By using the immersion heater, it brought it
    up to eating temperature without toughening it like the microwave would have done.

    Last night and tonight we did a small prime sirloin we had in the
    freezer from Costco. It was about 1 1/2 inch thick. I put the meat thermometer we use in the smoker into it. Then seared it in a cast iron skillet, followed up at 400F in our toaster oven until internal temp was
    110f. Came out very good. The reheat pretty much was a redo, searing
    on the cut sides and then back into the toaster oven.

    Beside the pellet smoker/grill and the kamado grill, the immersion
    heater will be available to do some sous vide cooking at the picnic.

    I have heard of sous vide, and would like to see it in action. Looking
    forward to picnic at your place.

    Title: FIESTA BREAD
    Categories: Appetizers
    Yield: 6 Servings

    1 cn (14 1/2 oz) Mexican style
    -stewed tomatoes, drained &
    -chopped
    1 cn (4 oz) diced green chiles
    1/4 c Sliced ripe olives
    1/2 ts Oregano
    1 Large loaf French bread
    2 c Shredded Monterey Jack
    -cheese
    1/4 c Grated Parmesan cheese

    Combine tomatoes, chilies, olives and oregano. Cut bread in half
    lengthwise. Sprinkle each half with shredded Monterey Jack cheese.
    Spoon tomato mixture over each half; sprinkle with Parmesan cheese
    Place on baking sheet; bake @ 425 degrees for 10 minutes. Slice and
    serve. Makes 6 servings.

    Variation: Fiesta bread is delicious with any flavor of stewed
    tomatoes - Italian, Cajun or Regular. In place of green chilies, use
    1/4 c of sliced green onions.

    Yes, they were varied. We should be getting a few more meals
    delivered. OTOH, I have been doing a few things. I had done some lamb chops sous vide. I had then put some packs of them in the freezer.
