    I really like to render fat, not only for the
    wonderful cooking medium it produces, but also
    for the cracklings.
    Yup, cracklings is good.... :)

    So I took Bonnie to a comidas tipicas place
    and ordered the fried crunchy things plate.
    Yuca sticks, a meat=filled yuca ball, a
    corn-filled corn-crusted tamale, some
    smashed plantains, and a big chunk of hard-
    fried chicharron. She initially said just
    a tiny bit to try, but after one taste,
    well, I'm not sure I got close to my half.

    I've converted all my lady friends of all
    persuasions to the joys of cracklings, all except
    Annie, and she doesn't really count any more.
    No contact at all with her any more...?
    Not directly and hardly otherwise.
    A shame, but that's the way life goes, sometimes...

    She booted her brother out of her life, then
    Marinda, then Linda and J.J., then one or another
    of the Lamades, then me. I thought about seeing
    what was what, but by this point it had to be
    more her issue than mine, and Lilli and now
    Bonnie are taking more of my time and anxiety
    anyhow.

    One of the reasons nuts are so beloved is
    that they are high in fat.
    True... :) Part of what caught my eye was the polyunsaturated... ;)
    The jury's out again on them, though current
    thinking is that you should avoid them.
    Even when they occur naturally....?

    Probably, though if something occurs naturally
    in what you want to eat, you have those choices.
    It is entirely unclear whether natural bad fats
    have bad effects the way artificial ones are
    supposed to.

    Cook for a benefit, sure. Cook for the Legion,
    sure. Cook for lazy friends, sometimes.
    And for your own enjoyment, given the chance....? :)

    I'm mostly okay and even happy to be able
    to exercise my kitchen knowhow, especially
    when I am among the ones who get to enjoy
    the fruits of my labors, which is almost
    always, because I taste all the time and
    cook up the gristly fatty trimmings of meat
    and when a sauce is done get to scrape up
    the stuck to the bottom bits.

    As oatmeal is one of those things that
    perhaps by its mouth-coating texture
    really encourages my sweet tooth, which
    should not really be encouraged.
    Well, at least the butter, cream and nuts aren't in the sweets
    category.... ;) And cinnamon (one of my regular additives) is even medicinal..... ;)

    I've taken to gnawing on cinnamon sticks,
    but I doubt that has much beneficial effect.

    The theory being that it would/could improve your vision, if you
    could
    tolerate the surgery....
    Something like that.
    Hope it works out, then... :)

    How go the tests...? Or haven't they happened yet..?

    It's been too busy lately for me to submit
    myself to tests.

    And the harbor. Did I forget to mention the
    harbor? When I got to the room (Lilli was
    already there) the curtains were open, and I
    couldn't see anything, and I said, what's my
    status good for then, but, duh, it was dark
    outside. In the morning all became clear.
    The harbor might be worth it... :)
    It's as I said up a couple hundred meters. The view is
    pretty good, but the view from our room at the
    Intercontinental a few years ago was truly wonderful,
    right on the water from maybe 50 meters. And the way
    they got more customers at the bar was to install
    picture windows that were enlarging lenses, so that
    what was actually a hundred meters away looked like
    it was threatening to crash into the lobby.
    That would be an interesting sight, to be sure... :)

    After the first what th' moment, you just
    enjoyed the effect.

    I admit, when the mid-levels were half as high
    and half as extensive as they now are, the
    view was much better,
    And more worth the trip... :)
    Back then the trip cost a couple bucks.
    Definitely better value... :)

    The experience was much different. You of
    course could get to the mid-levels for free
    (I think that's still true), but if you
    wanted to go to the top, it cost as I said
    just a couple bucks, and you were let out
    into this little house (now replaced by a
    shopping center and a Madame Tussaud's),
    and you could take a walking trail around
    or a longer trail to the real peak or (as
    I did) have some of the delicious curry at
    the Peak Cafe, which has been renovated to
    an idealized past state with the prices and
    attitude crazily jacked up.

    Crazy Easy Pan-Fried Plantain Patties
    categories: Latin, starch, side
    servings: 1 to 2

    1 yellow/brown plantain
    1 Tb tapioca flour
    1/2 ts cinnamon (optional)
    ghee or other choice of cooking fat, as needed

    Peel the plantain and place in a medium bowl.
    Ripe and over-ripe plantains should peel much
    easier than green plantains, so it shouldn't
    be too much effort to peel it. Using a fork,
    mash the plantain.

    Add the tapioca flour and cinnamon to the
    mashed plantain, mixing well. You want to
    make sure there are no large chunks of
    plantain, but small chunks are just fine.

    Heat a cast iron skillet over medium heat.
    Add a couple Tb of your favorite cooking fat
    and allow it to get hot.

    Using 2 to 3 Tb for each patty, drop the
    plantain mixture into the skillet and fry
    for about 2 min on each side or until lightly
    browned.

    Does sound like her issue.... and Billy isn't there to need you anymore,

    It is entirely unclear whether natural bad fats

    My theory is that naturally occuring ones probably are in conjunction
    with mitigating factors in the same food.... like the egg whites that
    balance out the cholesterol in the egg yolks.... :)

    Fu was gleefully showing us the "trimmings" from the fish that he gets
