    An octave jump just doubling the frequency,
    no problem. It might have been that the other
    frequencies that make up the timbre would be
    messed up, but it turns out that by and large,
    doubling them does no harm. If there's attack
    or articulation, a good ear might be able to
    tell a difference, but I'd guess most wouldn't.
    And unless it had a lot of solo passages, even less likely that it would
    jump out for very many people....

    It was a sextet or octet passage, so any
    timbral issues would have been mostly
    disguised by the general jumble.

    A friend of mine was budget director at the T
    and discovered that the cost of labor to collect
    fares exceeded the revenues! so looked into making
    Boston public transit free, She found that in
    systems that have done this, ridership goes down
    and vandalism goes up. Free stuff and those who
    take advantage of it are stigmatized, it turns out.

    Easy Cajeta (Mexican Caramel)
    categories: sauce, sweet, dairy
    yield: 1 c

    4 c goat's milk
    1 c sugar
    1 cinnamon stick
    1/2 ts baking soda dissolved in
    1 Tb water
    1 ts vanilla extract

    In a small cup, mix 3 Tb milk with the
    soda mixture. Set aside.

    Place the sugar, cinnamon stick and
    remaining milk in a very large pot
    over medium to medium-high heat.

    Bring the mixture to a simmer, stirring
    frequently to dissolve the sugar.

    Once simmering, remove the pot from the
    heat and add in the dissolved baking soda.
    The mixture will froth up quickly, almost
    doubling in volume. Once the mixture stops
    bubbling, return the pot to the heat and
    bring it back to a simmer.

    Cook until the mixture has reduced and
    thickened (45 to 60 min). Be sure to stir
    frequently, scraping the bottom of the pot
    so it doesn't burn. The cajeta is done
    when you can scrape the mixture aside and
    see the bottom of the pot. It should be
    thick like honey. Remove from the heat
    and stir in the vanilla.

    To store, pour the cajeta into a glass jar
    and let cool. Cover and store in the fridge
    for up to two weeks.

    The cajeta will thicken once it cools. To
    soften it, microwave it a few seconds at a
    time or run it under hot water.

    I guess those crafty Europeans have found a way around that problem. When I was there last fall, after you guys dumped me off in Toulouse...
    I travelled exclusively by train. Of the 14 train legs I rode (and paid for), I had my ticket looked at 5 times (35.7% of the time), income without labor to verify.
