• 665 jerky, swans and booze

From MICHAEL LOO@1:123/140 to JIM WELLER on Thursday, December 13, 2018 08:47:16
Ah, you innocent northerners. A lot of our jerky now is
made out of chopped and formed meat.
It's increasingly difficult to get real jerky
Not in my part of the world!

    Lucky part of the world.

I don't see how they get away with advertising it as
"the meatiest of beef jerky meat," but here's the
ingredient list for Slim Jim, which at least at one
time was the most available dried meat product here:
beef, mechanically separated chicken, water, corn
syrup, soy protein concentrate, less than 2% of salt,
spices, dextrose, paprika and paprika extractives,
flavoring, hydrolyzed soy, corn, and wheat proteins,
lactic acid starter culture, sodium nitrite. Mechanically
    separated chicken??

maybe that's part of the increased appeal of
dehydrators, which allow you to make your own
Good beef jerky is really expensive so making one's own makes all
kinds of sense and wild game jerky must always be homemade.

Making one's own all sorts of things makes all kinds
    of sense.

Vickie Kerr / sold out her Miss Vicky's [to] Frito-Lay.
    I was sorely disappointed
We simply never buy them anymore.

Fair enough, but it's still saddening.

"foie dog," / priced at $12 / extortion of the highest order.
I too would have been suckered in by the promise of something
    really special.

The unfattiness and lack of general appeal
    was just bizarre.

I have often wondered as to exactly what is the process involved in "mechanically separated" meat products. OTOH, I have also decided that
it is one of those things "you don't want to know".

The title of this on totally caught my eye.
