    Ponderosa Pea Salad

    1/4 cup mayonnaise
    1/4 cup sour cream
    1 tablespoon white wine vinegar
    Coarse salt and freshly ground pepper
    1 pound frozen peas (do not thaw)
    1/2 c red onion, halved lengthwise and thinly sliced
    1/4 cup packed fresh flat-leaf parsley leaves
    4 ounces bacon, chopped
    2 ounces aged white cheddar, shaved or coarsely grated

    Whisk together mayonnaise, sour cream, and vinegar in a large bowl;
    season generously with salt and pepper. Fold in peas, onion, and
    parsley. Refrigerate at least 4 hours.

    Meanwhile, cook bacon in a large skillet over medium heat until
    browned and fat is rendered, 8 to 10 minutes. Transfer to paper
    towels to drain and crisp.

    Let salad stand at room temperature for 10 minutes. Gently fold in
    cheddar and bacon just before serving.

    Actually, Lancaster is barely the beginning of Dutch country.
    Intercourse is more like where it is really there. And that is a 45
    minute drive from York, i.e. adding a 1 1/2 hour to a trip where we are
    already stretching our limits of less than six hour drive. Good
    thought, but it would not work for me.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Bacon & Double Cheese Quiche
    Categories: Main dish
    Yield: 8 Servings

    MMMMM----------------------CRUST -- RECIPE---------------------------
    1 1/3 c Flour -- recipe
    1/8 ts Salt
    1/2 c Butter -- chilled, cut in
    Pcs
    2 tb Water -- cold (to 3 tb)

    MMMMM---------------------FILLING -- RECIPE--------------------------
    10 Strips bacon -- lean
    4 lg Eggs
    1 1/2 c Light cream
    1/4 ts Thyme
    1/8 ts White pepper
    1/2 c Cheese, Gruyere -- shredded
    1/2 c Cheese, Cheddar -- shredded
    30 Minutes preparation
    30 Minutes chilling
    45 Minutes baking

    1 To prepare the crust, in a large bowl, mix together the flour and
    salt. Using a pastry blender or 2 knives, cut in the butter until
    coarse crumbs form.

    2 Add water, 1 tablespoon at a time, tossing with a fork, until a
    dough forms.
    Shape into a disk, wrap in plastic wrap, and chill in refrigerator
    for 30 minutes.

    3 Preheat oven to 375 degrees. On a lighlty floured surface, using a
    lightly
    floured rolling pin, roll the dough into 11" circle. Fit into 9" pie
    pan. Trim edge, leaving 1/4" overhang. Fold under to form standup
    edge. Prick dough with a fork. Line with foil and fill with pie
    weights or dried beans.

    4 Bake for 10 minutes. Remove the foil and weights. Bake until
    lightly golden, about 5 minutes. Transfer to a wire rack to cool.

    5 Meanwhile, prepare filling, in a medium skillet, cook the bacon
    over medium
    heat until crisp, 8 to 10 minutes. Transfer to a paper towel to
    drain.

    6 In a small bowl, whisk together the eggs, cream, thyme, and pepper.
    Pour
    into crust. Crumble bacon. Sprinkle the egg mixture with the bacon,
    Gruyere
    cheese, and Cheddar cheese. Bake until golden and custard is set,
    about 30 minutes. Serve warm.

    NOTES : Baking Tips: To freeze: Cool baked quiche completely, wrap
    airtight,
    and freeze for upto 1 month.

    Maybe a bit further west of Intercourse, but still not all that close...

    And that is a 45 minute drive from York, i.e. adding a 1 1/2 hour to
    a trip where we are already stretching our limits of less than six
    hour drive. Good thought, but it would not work for me.

    Having just driven that, I quite agree... one wouldn't have to retrace
    one's path, but it would definitely add more time to the trip even so...
    I don't associate Penn Dutch area with a trip to/from MD... it's its own separate trip... which I'll be making the weekend after the Picnic as my
    niece is getting married in Quarryville PA, just south of Amish country.

    something new here.

    There was a time I could do Yellowknife to Edmonton, 1600 km, in
    16 hours straight but not anymore. 8 hours per day is about my limit
    now.

    I can understand that.

    There are no Amish in western Canada but we do have various
    flavours of Mennonites and Hutterites. Their kitchens produce some
    awesome baking and hearty dishes.

    Zucker Pie

    1 c. thick cream
    1 c. sugar
    1 egg
    1 tsp. vanilla
    1 tbsp. cornstarch
    1 tsp. cinnamon

    Beat all the ingredients together and pour into an unbaked pie
    crust. Sprinkle with cinnamon. Bake at 350 F for 35 to 40 minutes.
