    fries to Lilli, who liked them but warned me they
    were very salty as well, so I tried one, scraping off
    the crystals first; it was indeed almost inedible.

    I was thinking that other people eat like that
    every day, sometimes twice. No wonder we have
    some national health issues, but yes wonder if
    the obesity epidemic might be partially a fluid
    retention problem.

    The real impetus for the post was my choice of drink:

    Yield: 12 to 15

    12 to 15 corn husks for wrapping
    1/4 c lard
    1/4 c Butter, softened
    2 ts baking powder
    2 c masa harina
    1 c warm water
    2 ts salt
    3 ears corn on the cob

    Add the cornhusks to a large pot. Pour boiling
    water over them and let them soak 30 min to
    make them pliable.

    Add the lard, butter and baking powder to a
    food processor or mixer and beat until until
    light and fluffy.

    Cut enough corn kernels off the cobs to make
    2 cups. Scrape the cobs with a knife to get
    all their milk. Add the corn kernels and
    their milk to the food processor and pulse
    until fairly smooth but still a little chunky.

    In a large bowl, mix together the masa harina,
    salt and warm water and knead to form a pliable
    mass. Pulse a little bit at a time into the
    corn and lard mixture until smooth.

    Drain the cornhusks and wipe dry. Lay out a
    husk with the pointed end up and add 1/4 c
    dough to the center. Fold in each side to
    cover the dough. Then fold up the bottom of
    the husk. Finally fold down the pointed top
    and insert it into the bottom to make a
    package. Tie the tamal with string if needed.
    Repeat with the rest of the dough.

    Set up a steamer and steam the tamales for
    30 to 45 min. Remove and serve hot with a
    little milk or cream poured over the top.

    Tamales de Elote Variations

    Savory additions: Shredded cheese, chopped chilies.

    Sweet additions: Raisins, cinnamon, substitute
    milk for the warm water. Add 1 or 2 Tb sugar
    if you like your tamales sweeter.

    Some of it likely is fluid retention.... all that salt probably also
    does cause other issues as well... especially for those who are
    sensitive to it...

    Indeed... also likely to their detriment... Again, though, people have different sensitivities to caffeine... and as well, to sugar and HFCS...
    A friend at the retreat I just went to was telling us of days past when
    she used to drink 30 double cups of strong tea a day... didn't think it
    was a great thing in retrospect... a definite caffeine buzz there...
