fire threat. (It was ultimately saved.)

I have a niece and nephew living on an acreage in that particular
Paradise Valley not far from the market garden farm. Their place is
on the banks of the Hay River about five miles outside of the town of
Hay River and quite wild and pristine but they still have
electricity and a paved road. There are bald eagles nesting in a
tree between the house and the river. A lovely spot.

Lisa Smith's Family Chili (Hay River)
cat: Chili, Beanz, Can-Mex, not Tex-Mex
Ground meat: Beef or moose 1.5 pounds
Canola oil 1 tablespoon
Yellow onion 1 medium, diced
garlic 2 cloves minced
Chili powder 2-3 tablespoons
Dried oregano 2-3 teaspoons
Ground cumin 2 teaspoons
Ground coriander 1 teaspoon
salt To taste
Kidney beans 2 cans 540 ml each
Canned diced tomatoes 796 ml
Bell pepper - any colour 1 chopped
Mushrooms 1 small can, drained or 6-8 fresh sliced.
Celery 1 rib diced
White vinegar 1-2 tablespoons
1. In a large pan, brown the beef or moose in the oil with the
onion and garlic.
2. As it is cooking, add all of the spices. Once the meat is
browned or mostly cooked, add the beans (including
juice), tomatoes and all of the vegetables.
3. Bring to a boil and simmer for at least 20 minutes. Near
the end of cooking time, add the splash of vinegar and
mix. Test for saltiness and add more salt if required.
Serve with rice.
